A modern architecture for this restaurant with terrace, whose mineral decor, designed by Christophe Pillet, would not be out of place in the heart of Manhattan, but as soon as you step outside, it is the sun of Fez and the traditional bamboo in the tubs on the terrace.
Thierry Vaissière is a chef with a prestigious career: from Lucas Carton to the Sofitel Paris Le Faubourg restaurant, via Drouant and the Tour d’Argent, he has collected awards, toques and stars. In 2003, he took over the management of the “Maison Blanche” restaurant in Paris, and then opened two establishments, in Casablanca and Fez.
The restaurant in Fez is located in the heart of the new city.
Its menu offers vegan, vegetarian and gluten-free dishes.
The price range is quite high: two a la carte menus, at 450 and 550 dirhams without wine.
